Frollini felici - Happy cookies




Cosa c’è di più confortante di un frollino o cookie che dir si voglia? Per me è il top del comfort food, accompagnato con una bella tazza di tè…
In occasione sempre della festa di compleanno del nostro piccolino ho pensato di rendere dei biscotti di pasta frolla un po’ speciali.. ed ecco qua!                                                                  For English translation see the bottom of this post

Ingredienti per circa 20 frollini felici (10 bianchi e 10 al cacao)


Per la frolla bianca:
200 gr di farina tipo 00
100 gr di burro
100 gr di zucchero
1 uovo
1 cucchiaino di lievito per dolci
1 cucchiaino di estratto di vaniglia (o vanillina)
Scorza di limone (se vi piace)
Per guarnire:
100 gr di cioccolato fondente

Per la frolla al cacao:
170 gr farina tipo 00
30 gr cacao amaro
100 gr di burro
100 gr di zucchero
1 uovo
1 cucchiaino di lievito per dolci
1 cucchiaino di estratto di vaniglia (o vanillina)
Per guarnire:
100 gr di cioccolato bianco

Il procedimento è identico per entrambe le frolle: mescolare gli ingredienti secchi in una ciotola (farina e cacao setacciati!,lievito, zucchero) unire l’estratto di vaniglia e nel caso della bianca la scorza del limone. Aggiungere l’uovo e mescolare con una forchetta, unire il burro ammorbidito o fuso e continuare a mescolare con la forchetta poi con le mani, brevemente fino ad ottenere una pasta liscia e compatta. Avvolgerla in pellicola trasparente e riporre in frigo per almeno una mezz’ora. Io di solito la preparo la sera prima e la lascio riposare tutta la notte.

Tolte le due frolle dal frigo infarinare il piano di lavoro e cominciare a lavorare la pasta (iniziate magari con quella bianca) con le mani per ridare l’elasticità necessaria per lavorarla.
Stendere la pasta fino ad ottenere uno spessore di circa 3-4 mm e con un bicchiere ricavare 20 cerchi, su 10 di essi con uno stampino piccolo a forma di luna  ricavate il “sorriso”, incidendo la pasta nella parte inferiore (attenzione a non lasciare il bordo troppo sottile).
 

Ponete i 20 biscotti su una teglia ricoperta di carta da forno ed infornate a 160° per 10 minuti circa. Sfornate e poneteli su una gratella per raffreddarli.

Ripetete la stessa operazione con la frolla al cacao.

Mentre i biscotti si raffreddano, sciogliere il cioccolato fondente ponendolo in una ciotola sopra ad un tegamino con acqua in ebollizione e lo stesso fate con il cioccolato bianco.
Quando sono completamente fusi mescolare e  metterli da parte 5 minuti perché si raffreddino un poco.

Spennellare i 10 biscotti di frolla bianca con un po’ di cioccolato fondente e chiuderli con i 10 biscotti di frolla bianca con il sorriso.
Spennellare i 10 biscotti di frolla al cacao con un po’ di cioccolato bianco e chiuderli con i 10 biscotti di frolla al cacao con il sorriso. Et voilà!

Non resta che decorarli con occhi, sopracciglia, capelli. … o come vi suggerisce la vostra fantasia (sbizzarritevi!)  usando uno stecchino tocciato nel cioccolato fuso.  
GNAM!!

L'idea in più: se vi avanza dell'impasto sia bianco che nero formate delle palline e cuocetele sempre per circa 10 minuti. Una volta raffreddate, con l'aiuto di un cucchiaino decoratele col cioccolato fuso fatto cadere a filo.

I called these biscotti “Happy Cookies” = “Biscotti Felici” as for sure they’ll  bring happiness to kids …and not only! I’ve made them for my little Lorenzo’ s  third birthday and they have been very appreciated!
The cookies are made of shortcrust pastry and cocoa shortcrust pastry , these are the ingredients to make around 10 cookies (doubled) each version:

Shortcrust pastry
1 and 2/3 cup All-purposes flour  
1 egg and 1 yolk
½ cup granulated Sugar    
½ cup unsalted butter                                                                             
1 teaspoon vanilla extract
1 teaspoon of powder yeast
Pinch of salt
Lemon zest (optional)

Garnish:
100 gr dark chocolate (3.5 oz)                                              
Cocoa shortcrust pastry
Same ingredients as the “white” with only these variations:
1 and 1/3 cup all-purposes flour
¼ cup  unsucred cocoa powder
no lemon zest





Garnish:
100 gr white chocolate (3.5 oz)

                      
For both preparations use two different bowls but the instructions are the same, as follows:
In a large bowl mix the flour, salt, yeast, sugar (and cocoa)  make a hole in the center and add the egg and yolk, then slightly beat with a fork and add vanilla extract (lemon zest) and, as last ingredient, the butter (I usually melt it, as it easier to incorporate to the dough). Work fast and shortly with hands until you have a smooth dough. Wrap it in plastic and let it rest in the refrigerator for at least 1 hour, better overnight.

Unwrap it, work a bit with your hand on a floured surface to allow the dough  to turn elastic again. Roll it  2 mm (0.07 in) thick and with a pastry cutter or a glass cut 20 circles about 2 and ½ in.  of diameter. Do the same for each dough. In 10 of them, using a little moon shaped cutter, make the smile as shown in the picture.
This way you will have: 10 cookies + 10 cookies w/smile for the shortcrust pastry and 10 cookies + 10 cookies w/smile for the cocoa shortcrust pastry.

Preheat the oven at 180°C (around 350°F)
Put the cookies on rows on a baking pan covered with parchment paper and cook for about 10-15 minutes until they become slightly brown.

Let the cookies cool on a rack and in the meantime melt the two chocolate in two different bowls on two pans with simmering water.

With a tablespoon put some white chocolate on a cocoa cookie without smile, spread evenly not covering the edges and close with a cocoa cookie with the smile. Dip a toothpick in the chocolate to make eyes, eyebrows, hairs, or anything your fantasy suggests you! Repeat with the rest of the cocoa cookies.

Do the same with the white cookies using melted dark chocolate and ….ENJOY!!!

What an idea!!!:
If you have some shortcrust pastry leftover both white and dark, you can make some little balls, cook them for 10 minutes same temperature and once cooled, spoon a little of the melted chocolate on the top of each ball.. YUMMY!
