Maltagliati e fagioli - Bean soup with maltagliati (pasta)

Lo so, lo so... la mia settimana dei buoni propositi era iniziata alla grande lunedì con delle sogliole al vapore, mercoledì però già vacillavo con i biscotti all'olio evo e oggi.. pasta e fagioli! Non è che ho mollato la dieta ma, col freddo che fa, mi andava proprio una bella zuppa calda e confortante.  Non so da quant'è che non mangiavo una bella zuppa di fagioli, che bontà! ahem... ok, conosciamo tutti gli effetti collaterali, ma per chi di voi ama il genere, vale proprio la pena..!! ;-D
Questa è la ricetta che mi ha passato mia mamma, che ho mangiato fin da piccola, fino a che non mi sono "accasata", quindi è super collaudata!
Io avevo dei maltagliati, residui di una sfoglia di tagliatelle fatta qualche giorno fa, perciò ho usato quelli, ma potete benissimo usare la pasta che più vi piace, anche il riso oppure.. anche niente pasta! Infatti è buonissima anche da sola.

Ecco qui gli ingredienti per 4 persone 
250 gr di fagioli borlotti
Olio evo
1 mazzetto di prezzemolo fresco sminuzzato finemente
1 aglio
250 gr di passata di pomodoro 
Sale, pepe
Parmigiano reggiano 
Per guarnire:
crostini di pane (facoltativo - io fette di pane al semolino tostate in padella con un filo d'olio evo)

Immergere i faglioli in una ciotola con dell'acqua per almeno 4/6 ore.
Cambiare l'acqua e farli cuocere coperti a fuoco basso per circa 2 ore, salando  verso la fine.
Schiacciare con un cucchiaio la metà dei fagioli dentro ad un colino in modo da trattenere le bucce e far passare solo la polpa, che unirete al resto dei fagioli.
In un tegame aggiungere 3 cucchiai di olio evo e far soffriggere l'aglio e il prezzemolo per circa 5 minuti.
Aggiungere la passata di pomodoro e far cuocere dieci minuti circa, regolando di sale e pepe.
Unire poi i fagioli con la loro acqua di cottura e cuocere ancora 1 ora circa.
Trascorso questo tempo aggiungere i maltagliati e cuocere per altri 10 minuti circa.
Spegnere il fuoco, e servire con un giro d'olio, una macinata di pepe e parmigiano (io come se piovesse!).

Questa è la mia proposta per la settimana 43 del "My Legumes Love Affair" (MLLA) un'altro fantastico evento creato da Susan del blog The Well Seasoned Cook (lo stesso dei Black and White Wednesdays, per intenderci) ospitato questo mese sul blog di Claire, Chez Cayenne.

I know, I know.. I started my "good intentions week" on Monday with steamed soles, then I surrended a bit on Wednesdays with Biscotti all'olio d'oliva  and today.. bean soup with pasta!! I have not given up my diet, but these are really cold days and I feel like having a nice soup, warm and comforting..
I can't remember the last time I had a good bean soup! ok, a part from its undesired effects ;-), but for those who loves this kind of dish, it's worth it! LOL!
This is the recipe my mom used to make, since I was a little girl, so it's super-tested!
I had a leftover of maltagliati (fresh pasta cut into irregular shapes) from my previous preparation of tagliatelle, so I used those. But you can use any kind of pasta you like, even rice... or no pasta at all! In fact this soup it's delicious also as it is!

Ingredients:
250 gr pinto beans (fagioli borlotti)
Extravergin olive oil
1 wisp of parsley finely chopped
1 clove of garlic
250 gr of tomato sauce
Salt, pepper
Parmesan cheese

To garnish:
bread croutons (optional - I've used semolina bread slices toasted in a pan with little olive oil)
Put the beans in a bowl and cover with cold water. Let them rest for about 4/6 hours.
After this time, change the water with other fresh one and cook them in a pan covered for about 2 hours, at low gas.
After this time, put half the beans in a strainer and smash them with a tablespoon, this way you divide the pulp from the skins (you will throw the skins away).
You will stir the pulp with the rest of beans in their cooking water.
In another pan add 3 tablespoon of extravergin olive oil, the garlic and the parsley finely chopped and cook for about 5 minutes. Add the tomato sause and cook another 10 minutes, add salt and pepper to taste.
Add the beans with all their cooking water, and let cook another hour.
After this time add the pasta and continue cooking until ready (time here depends on which kind of pasta you choose).
Serve hot with some extravergine olive oil on top, pepper and parmesan cheese (Me, as it was raining!).

  2. Mi fa piacere vedere che partecipi a MLLA, un altro mitico evento di Susan. Avendo partecipato alla prima edizione e a molte di quelle che l'hanno seguita, mi sento un po' una veterana. Ottima scelta per l'evento e direi che e' un'ottima scelta anche nutrizionale. Mi hai fatto venire voglia di prepararne una bella pentola.

  4. Secondo me, la zuppa è un ottimo proposito! I fagioli fanno benissimo e le verdure danno sapore e sali minerali. In più è deliziosa, insomma, vengo a cena da te....^_^

My mom has made Lima Bean Stew since I was a child so I can relate to your mother's super-tested recipe! It's been so cold and snowy in Colorado...your recipe is on the menu this weekend.
