Risotto al pesto di rucola e noci

Questa è una ricetta che ho visto sul numero di Dicembre 2011 di Sale&Pepe.
Mi sono innamorata prima della foto: un morbidissimo pesto che “colava” placido e lucente sul riso, il piatto su un bellissimo canovaccio stile shabby-chic .. insomma, semplice e magnifico.
Poi metteteci che adoro  i risotti, per cui non potevo far a meno di provarla!
La ricetta originale era un pesto preparato con prezzemolo e noci. Io ho diminuito drasticamente la quantità del prezzemolo e ho messo la rucola.
E’ una ricetta velocisssssima (potete fare il pesto anche anticipatamente, come me!) che nella mia pausa pranzo di ben 45 minuti ho potuto preparare, fotografare, mangiare e tornare al lavoro.

Questa è stata la mia tabella di marcia:
Ore 12.30: marco il cartellino al lavoro
Ore 12.35: infilo la chiave nella toppa della porta di casa
Ore 12.40: il brodo bolle e ho già tostato il riso
Ore 12.55: il riso è pronto e impiatto
Ore 12.57: scatto le foto ( da vicino, da MOLTO vicino, da lontano, luce, meno luce…)
Ore 13.00: me lo mangio in 2 minuti e 35 secondi
Ore 13.08: esco di casa
Ore 13.15: marco il cartellino .. uff, pant! (Fantozzi mi fa un baffo, modestamente!!)

Ingredienti per 4 persone:
300 gr Riso Arborio
1 scalogno
1/2 bicchiere di vino bianco
1,2 litri brodo vegetale
1 mazzetto di rucola
30 gr di Parmigiano Reggiano (o pecorino stagionato)
50 gr di gherigli di noci
1 rametto di prezzemolo
Olio evo q.b.
Sale q.b.

Stufate dolcemente per circa 3 minuti metà  scalogno tritato finemente e 3 cucchiai di olio evo.
Unire il riso e tostare per 4 minuti sempre mescolando. Sfumate col vino bianco.
Quando è evaporato aggiungete, poco alla volta, il brodo. Aggiungete altro brodo solo quando il precedente si è quasi del tutto asciugato.
Portate a cottura il riso poi spegnete il fuoco, aggiungete il parmigiano grattugiato (o il pecorino) e lasciate riposare coperto per due minuti.
Il pesto si prepara tritando nel mixer la rucola, il prezzemolo, le noci, il formaggio. 
Condite con 5-6 cucchiai di olio evo e una presa di sale (potete farlo anche in anticipo).
Impiattate il riso mettendo al centro una generosa cucchiaiata di pesto.
Completare con delle noci tritate grossolanamente.
Servite subito.

This is a recipe from the December issue of Sale&Pepe.
First I fell in love with the picture: a very soft  pesto pouring gently over the rice and the plate was over  a nice shabby-chic dish-cloth .. in a word, simple and amazing!
Then you can add that I love risotto SO MUCH, therefore I couldn’t help but trying it!
The original recipe called for a pesto prepared with parsley and walnuts. I have diminished a lot the parsley and added lot of rucola.
It’s also a super fast recipe (you can prepare the pesto in advance, as I did!) think that I have cooked, photographed, eaten it  and back to work in 45 minutes (my lunch break).

This was my schedule:
h. 12.30 pm: clocked off work
h. 12.30 pm: turned the keys in the keyhole
h. 12.40: stock is boiling and rice is toasted
h. 12.55: rice’s ready and dished
h. 12.57: taking pictures (close, very close, far, set light, less light…)
h. 13.00: eated in 2 minutes and 35 seconds
h. 13.08: rush out of home
h. 13.15: clocked in work...  uff, pant! (Fantozzi is nothing.. in all modesty!)

Ingredients (serve 4)
300 gr Arborio rice
1 shallot
1/2  glass of white wine
1, 2 lt of vegetable stock
1 wisp of rucola 
30 gr Parmigiano Reggiano (or Pecorino cheese)
50 gr walnuts
1 spring of parsley
Extravergin Olive Oil
Salt

Stew at low heat for 3 minutes half shallot finely chopped with 3 tablespoons of olive oil.
Add rice and roast for about 4 minutes, stirring continuously. Add wine and let it evaporate.
Then gradually add stock, and bring the rice to a full cook. (Add more stock only when the previous one is nearly fully absorbed)
When the rice is done, turn off the heat, add parmigiano or pecorino cheese and let it rest covered for 2 minutes.
Prepare the pesto mixing rucola, parsley, parmesan or pecorino cheese, walnuts. Season with a pinch of salt and 5-6 tablespoon of extravergin olive oil. (I suggest you to make the pesto ahead).
Dish the rice and put over it a good spoonful of pesto.
Sprinkle with coarsely chopped walnuts.
Serve warm.
